The Best Blast on the Beach fireworks show was shot off at 8:30 p.m. from the city pier and it was spectacular. This year’s events were great successes, and we would like to thank all those who came out and participated. Also, we would like to thank the Special Events for Mexico Beach committee and all their wonderful volunteers for organizing and putting on the event. We hope you enjoyed the July 4th festivities and will join us again next year!

Mexico Beach Fishing Report

July

Fishing along the Unforgettable Coast is hot, hot, hot. Gag grouper season is now open: they live in the same areas as the red snapper, so just keep the bait on the bottom and hold on!!! King mackerel are biting all along the buoy line and the “car bodies” reef area. Drifting live bait slowly produces explosions from these speedsters; the fish can jump entirely out of the water. Finish off your trip by taking the cleaned catch to one of our local restaurants and having them cooked “family style.” A fresh Gulf of Mexico dinner is hard to beat!!!

Pictured are Larry Hester, his son Frank, and his nephew Chevy Jones with a nice catch of red snapper and king mackerel.

Mexico Beach offers some of the best sport fishing in the world. For a complete list of charter services, marina info, and reef coordinates visit mexicobeach.com.

Recipe of the Month

Corn Bread Fried Oysters

We thank the MBARA for sharing this delicious fish recipe from the Mexico Beach Artificial Reef Association cookbook.

INGREDIENTS
1½ cups yellow cornmeal
½ cup all-purpose flour
2 eggs, lightly beaten
2 cups milk
¼ cup melted bacon fat or butter
1 tbsp. baking powder
½ tsp. salt
3 cups peanut oil, for deep-frying
36 freshly shucked oysters
Lemon wedges, as accompaniment

DIRECTIONS
In a medium bowl, combine the cornmeal, flour, eggs, milk, bacon fat, baking powder, and salt. Stir until the batter is smooth. In a large saucepan or deep fryer, heat the oil to 375°. Dredge each oyster in the cornmeal batter and fry in batches until golden brown, about 1 minute. Remove the oysters with a slotted spoon and drain on paper towel. Serve with lemon wedges.
