Happy New Year to All Our Residents, Visitors, and Friends!

Almost two weeks ago we said goodbye to 2014 and gladly rang in 2015. Our year was very good and we had an abundant number of celebrators at our Celebrate Twice New Year’s Eve event. The fireworks show was spectacular at midnight, and all those who rode the buses had a great, safe time with no incidents. This is one event everyone looks forward to—twice.

Mexico Beach Fishing Report

Mexico Beach Florida Fishing Report January

The whiting bite has been on fire since early December and shows no sign of letting up. The canal jetties are the favorite spots, and the surf near Fourth Street also shows signs of productivity. If you have a boat or want a charter, January is a great month for black sea bass and flounder in the local reef areas. Really large red snapper are in the shallow reefs; they’re a lot of fun for catch-and-release on light tackle.

Recipe of the Month

Florida Seafood Recipes

Seafood Salad

With many people having New Year’s resolutions to lose a few pounds, the Mexico Beach Artificial Reef Association cookbook provides a tasty salad recipe to help start the year off.

10 ounces imitation crab
1 6-ounce can crab meat
2 cups macaroni pasta, cooked
½ cup pimentos, diced
½ cup celery, chopped
½ cup bell peppers, chopped
2 tablespoons wine vinegar
½ cup mayonnaise
1 teaspoon salt, or to taste
¼ teaspoon pepper, or to taste
Chopped parsley

Mix the first six (6) ingredients in a large bowl. Stir vinegar, mayonnaise, salt, and pepper together until smooth. Pour dressing over crab and vegetables. Stir until well blended. Chill, garnish with parsley, and serve on a bed of lettuce. Enjoy!

The Mexico Beach Artificial Reef Association needs your best seafood recipe. They are currently working on the second edition of their famous seafood cookbook. It will be a completely new cookbook. Send your best seafood recipe to Sally Childs, PO Box 13470, Mexico Beach, Florida 32410 or e-mail her. Sally works at Sundance Realty and was one of the authors of the original cookbook. Put your name on the recipe and it will be printed in the new cookbook.

Thoughts for the Month

Thoughts from Mexico Beach Florida The great Benjamin Franklin gave us a lot of good (and humorous) advice! Enjoy!

★ He that lies down with dogs shall rise up with fleas.

★ Any fool can criticize, condemn and complain, and most fools do.

★ Creditors have better memories than debtors.

★ Beer is living proof that God loves us and wants us to be happy.

★ Beware of any hobby that eats

★ Guests, like fish, begin to smell after three days.

★ He that is good at making excuses is seldom good for anything else.

★ God heals and the doctor takes the fee.

★ If you want to know the value of money, try to borrow some.

★ Death takes no bribes.

★ I guess I don’t mind being old, but I don’t like being fat and old.

★ The absent are never without fault, nor the present without excuse.
