The 2015 Gumbo Cook-Off Was the Biggest Ever!

On Saturday, February 21, the 17th Annual Mexico Beach Gumbo Cook-Off took place and it was a celebration to remember. This year’s crowd had an estimated 2,000-plus visitors. The food, music, and weather could not have been more perfect. Winners are announced below.

Best of all, the proceeds go towards the annual Best Blast on the Beach Fourth of July celebration. Hearty congratulations go out to all the winners. If you joined us, we hope you will come back and enjoy the fireworks show!

Married in Mexico Beach

Beach weddings are romantic all year round. This month we want to thank two couples for visiting and getting married on our beach.

Becky and Brian came to us from southern Georgia to tie the knot on Mexico Beach. It was a beautiful ceremony and the weather was great. Congratulations Brian and Becky!

Our second couple is Amber and David from Dothan, Alabama. This was one of their last “official” acts before David returns to active duty with the Army. The ceremony took place with family and friends in a beautiful sunset celebration. Congratulations Amber and David!

And the Winner Is…

Mexico Beach Florida NewsLast month, up for grabs was a gift certificate to 40th Street Pizzeria and Seafood. The lucky winner is Bryan Couch from Greenwood, Indiana. Congrats Bryan!

This month we are giving away a gift certificate to Caribbean Coffee Shop, a great coffee shop located next to the Grove on Highway 98. Fishing in Mexico Beach

Mexico Beach Florida NewsMarch is the start of the spring migration of Spanish mackerel. They are caught along the second sandbar trolling silver spoons or from the pier using a “gotcha” plug for casting distance. Also the pompano start moving down the beaches between the second sandbar and the shoreline. Use sand fleas for best results.

Mexico Beach Vow Renewal

Mexico Beach Florida NewsWe’re getting a good response to our upcoming Vow Renewal Ceremony that will take place on the beach on Saturday, April 18. If you were married in Mexico Beach, you are invited to participate in this free ceremony. It will be on the beach at Sunset Park starting at 4:30 p.m. CST. There will be a reception to follow at the El Governor Motel. We will have complimentary DVDs for all participants so you will be able to share with friends and family. We plan on extensive news coverage and most of our lodging partners have special rates for that weekend. If you were married here, come join us!

Recipe of the Month

Florida Seafood Recipes

Baked Fish Neapolitan: Easy and Delicious!

We thank the Mexico Beach Artificial Reef Association for this delicious recipe!

INGREDIENTS
1 lb. white fish fillets
2 Tbsp. olive oil
1 medium onion, chopped
1 (15 oz.) can tomato sauce
2 cloves garlic, chopped
12 pitted olives, chopped
1 Tbsp. capers, drained
1 Tbsp. parsley, chopped
2 ribs celery, finely chopped
Salt and pepper to taste

DIRECTIONS
Arrange fish in a single layer in an oiled, shallow, ovenproof dish. Heat olive oil in a fry pan and sauté the onion gently until soft and golden. Add the tomato sauce, garlic, salt, and pepper. Cook over moderate heat, stirring frequently, for five minutes. Stir in olives, capers, parsley, and celery and spoon sauce evenly over the fish. Cover and bake at 375 degrees for 25 minutes. Serve and enjoy!

The Mexico Beach Artificial Reef Association needs your best seafood recipe. They are currently working on the second edition of their famous seafood cookbook. It will be a completely new cookbook. Send your best seafood recipe to Sally Childs, PO Box 13470, Mexico Beach, Florida 32410 or e-mail her. Sally works at Sundance Realty and was one of the authors of the original cookbook. Put your name on the recipe and it will be printed in the new cookbook.
