Married in Mexico Beach

Beach weddings are romantic all year round. This month we want to thank two couples for visiting and getting married on our beach.

Becky and Brian came to us from southern Georgia to tie the knot on Mexico Beach. It was a beautiful ceremony and the weather was great. Congratulations Brian and Becky!

Our second couple is Amber and David from Dothan, Alabama. This was one of their last “official” acts before David returns to active duty with the Army. The ceremony took place with family and friends in a beautiful sunset celebration. Congratulations Amber and David!

And the Winner Is…

Mexico Beach Florida NewsLast month, up for grabs was a gift certificate to 40th Street Pizzeria and Seafood. The lucky winner is Bryan Couch from Greenwood, Indiana. Congrats Bryan!

Fishing in Mexico Beach

Mexico Beach Florida NewsMarch is the start of the spring migration of Spanish mackerel. They are caught along the second sandbar trolling silver spoons or from the pier using a “gotcha” plug for casting distance. Also the pompano start moving down the beaches between the second sandbar and the shoreline. Use sand fleas for best results.

Florida Seafood Recipes

Baked Fish Neapolitan: Easy and Delicious!

We thank the Mexico Beach Artificial Reef Association for this delicious recipe!

1 lb. white fish fillets
2 Tbsp. olive oil
1 medium onion, chopped
1 (15 oz.) can tomato sauce
2 cloves garlic, chopped
12 pitted olives, chopped
1 Tbsp. capers, drained
1 Tbsp. parsley, chopped
2 ribs celery, finely chopped
Salt and pepper to taste

Arrange fish in a single layer in an oiled, shallow, ovenproof dish. Heat olive oil in a fry pan and sauté the onion gently until soft and golden. Add the tomato sauce, garlic, salt, and pepper. Cook over moderate heat, stirring frequently, for five minutes. Stir in olives, capers, parsley, and celery and spoon sauce evenly over the fish. Cover and bake at 375 degrees for 25 minutes. Serve and enjoy!

The Mexico Beach Artificial Reef Association needs your best seafood recipe. They are currently working on the second edition of their famous seafood cookbook. It will be a completely new cookbook. Send your best seafood recipe to Sally Childs, PO Box 13470, Mexico Beach, Florida 32410 or e-mail her. Sally works at Sundance Realty and was one of the authors of the original cookbook. Thoughts for the Month

Thoughts from Mexico Beach Florida To Celebrate St. Patrick’s Day:

★ You know its summer in Ireland when the rain gets warmer.

★ The only mothers it is safe to forget on Mother’s Day are the good ones.

★ Definition of an “Irish Fact”: That which tells you not what is the case but what you want to hear

★ Sign on a Kinsale shop: “Out for lunch. If not back by five, out for dinner also.”

★ They invented the three-day bank holiday weekend because you can’t lump all the bad weather into just Saturday and Sunday.

★ Notice in a Co. Down field: “Trespassers Prosecuted. Please Shut the Gate!”

★ Sign on an Irish gate: “The farmer allows walkers across the field for free, but the bull charges.”

★ Notice on a Cork building site: “The shovels haven’t arrived, and until they do, you’ll have to lean on each other.”

★ A police recruit was asked during the exam, “What would you do if you had to arrest your own mother?” He said, “Call for reinforcements.”

★ Another policeman said, “Are you going to come quietly, or do I have to use earplugs?”

★ A particular favorite for theft is the road sign to one Co. Kerry village that reads: “Inch, 1 mile.”
