Merry Christmas and Happy New Year to All our Friends!
Christmas is a very special occasion in Mexico Beach. It’s a time when our community comes together for the annual Christmas Tree Lighting Ceremony. This year’s celebration featured Lynn Kerigan as our honored tree lighter. Mrs. Kerigan is a pillar of our lovely community and we were very happy to have her as our tree lighter for this year’s ceremony.

After the tree was lit, it was time for carols to be sung. The local ukulele group led the crowd in traditional Christmas favorites and classics. The annual golf cart parade had a great turnout, with carts decorated in hundreds of lights and tinsel. Following behind the golf cart parade was Santa himself. He was very excited to greet all the boys and girls at the park. Each child had their special time with Santa to explain to him how good they have been this year and tell him their top wish list items. Cindy’s Dream Photos was on hand to snap a professional picture of each family; those images will be available at CindysDreamPhotos.com for a minimal donation, with proceeds going to our July 4th Best Blast on the Beach Fireworks Show.

We believe our annual Christmas Tree Lighting Ceremony tradition is fun for everyone, especially the children. We hope you can make it next year to enjoy the lighting of the 2017 Christmas tree with us. A very special thank you to the El Governor Motel, the City of Mexico Beach & Mexico Beach Public Safety, the Special Events for Mexico Beach, and the Mexico Beach Welcome Center, as well as all the other behind-the-scenes elves that made this year’s event look spectacular.

Last month, we had a gift certificate to the Mexico Beach Marina up for grabs. The winner was Carol Holz from Jefferson, Wisconsin. Congrats, Carol!

The weather has been wonderful these past months and many special couples had romantic wedding ceremonies right here in Mexico Beach. Here are a few of the happy couples:
Suzanne & Mark
Our first couple, Suzanne and Mark, came from Alabama to tie the knot on our beach. It was a delightful ceremony and perfect weather. Congratulations, Mark and Suzanne!
David & Renee
Our second couple was David and Renee, who joined us from Valdosta, Georgia. The wedding was in the early evening and it was beautiful with a spectacular sunset. Congratulations, David and Renee!
Levi & Kristen
Levi and Kristen came to our area to have a romantic wedding on the beach. It was a gorgeous ceremony with family and friends celebrating alongside them. Congratulations, Levi and Kristen!
Bonnie & Beverly
Our last couple is Bonnie and Beverly, who joined us from Chattanooga, Tennessee. They celebrated with a nice afternoon ceremony. Congratulations, Bonnie and Beverly!
New Year’s Eve Celebrate Twice
December 31, 2016 – January 1, 2017
Come celebrate the New Year—twice in one night! Mexico Beach wants to welcome patrons to stay at the beach this New Year’s Eve and ring it in twice. Complimentary shuttles will transport New Year’s Eve patrons to area hot spots from Mexico Beach to Port St. Joe and places in between, so you can enjoy being at the beach and celebrate the New Year. Start in Port St. Joe (in the Eastern time zone) to begin your celebration, then hop on a shuttle and come back to Mexico Beach (in the Central time zone), where you can do it all over again. Fireworks will be shot off twice as well. Port St. Joe will have a fireworks show at 10 p.m. Eastern time and Mexico Beach will have a fireworks display at midnight Central time. Make plans to celebrate New Year’s Eve—TWICE—at the beach!

Mexico Beach Gumbo Cook-Off
February 18, 2017
Are you ready to cook the rice, peel the shrimp, stew the veggies, and bask in the aroma of roux? If so, then tie on that apron and enter to be one of the chefs competing for the title of Gumbo King. The event begins at 10 a.m. and there will be tons of great gumbo and Brunswick stew. Tickets will be available for purchase to sample one, two, or as many gumbos or stews as you like. With live music and free beads, this is one cook-off that will get you in the Mardi Gras mood! All proceeds raised will go toward the Special Events for Mexico Beach’s Best Blast on the Beach July 4th fireworks show. Chef entry forms will be available by the first of the year.

Mexico Beach Snowbird Appreciation Luncheon

Herb-Baked Scallops
This is an easy recipe with a delicious outcome.
INGREDIENTS
2 pounds fresh sea scallops (if using frozen scallops, thaw first)
½ cup butter
3 tablespoons chopped parsley
1 ½ tablespoons basil leaves
1 teaspoon salt
¼ teaspoon pepper
DIRECTIONS
Wash and drain scallops and place them in a single layer in a large, shallow baking dish. Dot scallops with butter and sprinkle with parsley, basil, salt, and pepper. Bake in a preheated oven at 350 degrees for five minutes. Stir scallops to coat well with butter mixture. Bake another 20 minutes until tender. The butter sauce from the dish can be served over mashed or baked potatoes for extra flavor. Serve and enjoy!
