You may have noticed some heavy equipment on the beach recently. That’s part of our major, full-scale beach restoration project that is fully underway. The project will cover the beach from the canal to the Gulf County line. While there will be areas of the beach that will be closed off to the public due to construction, the remaining sections of the beach will be fully open. We are delighted to have this project underway and look forward to our improved, beautiful beach. This restoration will provide protection from future storms for upland structures as well as provide additional habitat for several species, such as shorebirds and sea turtles. This month, we want to introduce Cathey’s ACE Hardware. Their team has been serving our community for the past fifty years, and we can still depend on them when we have projects or repairs. They offer all your hardware needs, fishing supplies, a paint center, lawn and garden equipment, and more. Located in the shopping center on Highway 98, Cathey’s ACE Hardware is open seven days a week. Next time you’re in repair or building mode, be sure to stop by. Mexico Beach is a Leave No Trace community, and we appreciate your assistance in helping us keep our beaches clean. Any items left on the beach unattended from 7 p.m. to 7 a.m. will be removed and disposed of by the City of Mexico Beach. Items include, but are not limited to, tents and tent frames, beach chairs, coolers, umbrellas, toys, etc. Also, please fill in any holes before you leave and please remain off the sand dunes and out of the sea oats to ensure their continued nourishment. There are boardwalks and walking paths that can be accessed to reach the beach. Your assistance with these requests will keep our beaches beautiful and pristine. 3 1/2 cups cooked lobster meat 1/2 cup mayonnaise 2 Tbsp fresh lemon juice 2 Tbsp chopped fresh chives 1 tsp. coarse salt 1/4 tsp Old Bay seasoning 1/8 tsp cayenne pepper 2 Tbsp salted butter 8 hot dog buns, cut in half |
Combine lobster, mayonnaise, lemon juice, chives, salt, Old Bay, and cayenne in a bowl and mix well. Heat the butter in a skillet over medium-high heat. Working in batches, toast buns until golden brown, about three minutes per side, then transfer to a paper towel-lined plate as you work. Fill each bun with 1/4 cup lobster mix. Serve and enjoy! |
