Summer has arrived! Our beaches are beautiful, our restaurants are ready to feed the masses, and our city is ready to welcome everyone to come and enjoy the beach. Please be sure to do your part by taking all your belongings with you after your beach day, filling in any holes created, and adhering to our Leave No Trace ordinance. At the end of the day, you can sit back, relax, and enjoy one of our beautiful, spectacular sunsets. |

This month, we want to welcome back and reintroduce the El Governor Beach Resort & RV Campground. We are delighted to report that the resort is fully restored, along with the pool, beach bar, and gift shop. All are open for business. The staff worked extremely hard on their restoration, and the resort now has 108 beachfront rooms and 66 RV sites available. Be sure to stop by to say hello, welcome them back, and even book a room if you can!

Mexico Beach is a Leave No Trace community, and we appreciate your assistance in helping us keep our beaches clean. Any items left on the beach unattended from 7 p.m. to 7 a.m. will be removed and disposed of by the City of Mexico Beach. Items include, but are not limited to, tents and tent frames, beach chairs, coolers, umbrellas, toys, etc. Also, please fill in any holes before you leave and please remain off the sand dunes and out of the sea oats to ensure their continued nourishment. There are boardwalks and walking paths that can be accessed to reach the beach. Your assistance with these requests will keep our beaches beautiful and pristine. 2 lbs. red snapper fillets, skinned 2 Tbsp lemon juice 1/2 cup grated Parmesan cheese 1/4 cup butter, softened 3 Tbsp mayonnaise 3 Tbsp green onion, chopped 1/4 tsp. salt 1/8 tsp. liquid hot pepper sauce |
Cut fillets into serving sizes. Place fish on a well-greased broiler pan (13x10 inch). Baste fish with lemon juice and let stand for 10 minutes. Broil fish approximately 4 inches from heat for 4 to 5 minutes. Turn the fish carefully and continue to broil for 4 to 5 minutes longer until the fish flakes easily when tested with a fork. Combine cheese, butter, mayonnaise, green onion, salt, and hot pepper sauce in a bowl. Spread mixture evenly over fish and broil 2 to 3 minutes longer or until lightly browned. Serve with your favorite sides and enjoy!

We sometimes use or have heard the expression “Mad as a Hatter,” which means someone is crazy or doing something crazy. This saying surprisingly has nothing to do with Alice’s Adventures in Wonderland. The saying dates back to the 17th Century when hat makers used mercury to make felt hats. This exposure caused the hatters to shake and act in unusual ways, making them appear as though they were going mad. It even led to a disease called “Mad Hatter Disease.” These days, hat makers no longer use mercury, but the phrase has stuck around.
